A failing blower motor, a clogged grease pathway, or an obstructed external duct can cause cooking smoke to linger in the room, deposit a film of grease on your cabinetry and upholstery, and create conditions that may trigger smoke detectors during normal cooking activity.

We specialize in the large centrifugal blower assemblies used in La Cornue ventilation systems. These commercial-style squirrel-cage fans are engineered for high-volume air extraction at minimal noise levels — a combination that is technically demanding to achieve and maintain. Over time, the accumulation of grease on the fan blades shifts the rotational balance of the impeller, causing the motor bearings to absorb increasing vibration loads. This progressive imbalance produces the characteristic low-frequency rumble or rattle that owners notice during high-speed extraction. If left unaddressed, it eventually destroys the motor bearings and leads to total blower failure. We perform a complete blower assembly deep-clean, removing and degreasing the fan blades to restore aerodynamic balance, and we assess the motor bearings for wear. If motor replacement is required, we use only genuine La Cornue replacement motors with the correct Cubic Feet per Minute (CFM) rating matched to your specific range and duct configuration.

The lighting system within a La Cornue hood is another area that requires periodic specialist attention. Most La Cornue hoods use specialized halogen or high-output LED arrays mounted in thermally shielded positions directly above the cooking surface. The combination of intense heat from the range below and grease vapor that condenses on cool surfaces can compromise the wiring insulation, degrade the lamp socket contacts, and in some cases cause low-voltage transformers to fail prematurely. We disassemble the lighting module, clean all electrical contacts, test the transformer output, and replace any heat-damaged wiring with properly heat-rated conductors.

The baffle filter system — the corrugated stainless steel or aluminum panels that capture airborne grease before it enters the ductwork — also receives attention. We remove, degrease, and inspect all filter baffles for deformation that could impede airflow or allow grease to bypass the filter media. We also inspect the backdraft damper at the exterior duct termination, which is a frequent source of both noise (banging in wind) and reduced extraction efficiency.
